To be honest, this recipe came about because I was watching a tv show where someone snuck a bite of snickerdoodle cookie dough. Recently coming off of a full body 21 day detox, I resisted the urge to run to the store to pick up everything to make snickerdoodles & mindlessly eat the dough. It did however get my mind fluding with ideas for a healthy snickerdoodle protein ball.
As I've mentioned before, one of my favorite things to make are protein or energy balls. They are so simple to make & make for the perfect snack, post/pre workout fuel, or treat. I don't always get around to it but I try to make a batch weekly to keep on hand & these ones were definitely a keeper.
These protein balls are perfectly sweet, cinnamon-y, have a hint of vanilla & seriously take on the texture of cookie dough. You can't go wrong with that if you ask me! They only require dirtying one bowl, are gluten-free, dairy free, paleo, & can be made vegan with the simple swap of protein powders.

SNICKERDOODLE PROTEIN BALLS
Makes about 20 balls
2 cups cashew butter
2 scoops Vital Proteins Vanilla Collagen Peptides (or vanilla protein powder of your choice)
4 tbsp ground flaxseed
2 tbsp maca powder
2 tbsp pure organic maple syrup
1 tsp vanilla extract
1 tbsp cinnamon
1/4 tsp himalayan salt
3 tbsp coconut sugar
1 tbsp cinnamon
- In a large mixing bowl, add in all ingredients (except coating ingredients) & mix thoroughly with a wooden spoon until a doughy ball starts to form together. At this point I like to get my hands dirty & kneed the dough & roll into a large ball.
- In a small bowl mix together the coconut sugar & cinnamon. Roll dough into 1 inch balls & roll into the cinnamon-sugar mixture. Store in an airtight container in the fridge for up to a week. Enjoy!
*Note: The cashew butter I used was quite thick. If you find your dough is too wet, add more protein powder until the desired consistency is achieved.
