YIELDS 10 COOKIES
1 cup cassava flour
1/2 tsp baking soda
1/2 cup Moxie Nosh Trail Mix Butter
1/3 cup coconut oil, softened
1/4 cup Lakanto Monkfruit Maple Syrup (regular would work as well)
1/4 cup coconut sugar
2 tbsp plant-based milk
1/2 tsp vanilla extract
1/4 tsp pink salt
1/3 cup chopped chocolate
Preheat your oven to 350 & line a baking sheet with parchment paper. Set aside.
In the bowl of a stand mixer, mix together the Trail Mix Butter, softened coconut oil, maple syrup, coconut sugar & vanilla until well combined.
Slowly add in the cassava flour, baking soda & pink salt. Scraping down the sides until well incorporated. Fold in your chopped chocolate.
Use an ice cream scoop to scoop out the dough & place onto baking sheet, 2-3 inches apart. Press down on the cookies to slightly flatten a bit. Pop in the oven for 20-22 minutes. Let cool completely before removing from baking sheet. Enjoy!
